Shrimp Scampi

Serve over linguine with Italian bread or garlic bread, or with a fresh garden side salad.

Yield: 4 servings



Combine olive oil, dried parsley, fresh parsley, lemon juice, dry mustard, salt, pepper and garlic in a bowl and whisk to combine.

Pour the marinade in a gallon size resealable freezer bag, add the shrimp and seal. Shake to coat the shrimp with the marinade.

The shrimp can marinate in the refrigerator for at least 1 hour but no more than 2 hours. (Note that by marinating for more than 2 hours, the acid in the lemon juice can actually cook the shrimp.)

Prepare the linguine as directed on the package, strain the water and discard. Keep linguine hot until ready to serve.

Drain the marinade into a medium saucepan and bring to a boil. Boil for 2 minutes while constantly stirring, then remove from the heat.

Cook the shrimp by broiling, grilling or sauteing for 2 to 3 minutes per side until pink and opaque.

Add the cooked shrimp to the hot marinade and stir to coat.

Place linguine on a platter and pour the shrimp and marinade over the top. Enjoy while hot!
